A chilled rail holds 10 one sixth size pans across the top, and 8.98 cubic feet of refrigerated storage sits underneath, split across four drawers rather than a single door cabinet.
Four drawers keep prepped product sorted and let a cook pull one pan without opening the whole cabinet to the room, which holds temperature better through a long rush. A 14.5 inch deep cutting board runs the length of the unit, and the insulated lid closes over the pans between services to protect product. The rear mounted digital controller keeps the cabinet between 0.5 and 5 degrees Celsius and stays out of the work area. Stainless steel inside and out makes cleaning simple, casters let staff roll the unit out from the wall, and the back mounted compressor runs on R290 refrigerant from a standard 115 volt outlet.
